Carol Whitlock is Professor of Food Science and Nutrition.  Her principle interests are: teaching product development, food science, food chemistry, nutrition, technical writing, laboratory research methods, sensory evaluation; research and consulting in areas of food component interactions, consumer perceptions of food quality, impact of food technology on nutrition, point-of-purchase information systems, problem-solving and technology transfer to food service operations, and technology in the delivery of education and services.
